Cedar Wild Rice Mushroom Stew
Ingredients
Cedar Wild Rice Base
- 1 1/4 cup wild rice
- 2 cups whole brown rice
- 1 canister dried shittake mushrooms, presoftened
- 1-1/2 cups baby carrots
- 1/4 cup dried onion
- a sprig of white cedar (arbor vitae)
- 15 oz box of beef broth
Stew Additions
- 1 medium onion, chopped
- 2 lb stew meat (used 1-2 in cubes of top loin boneless pork roast b/c cheap, was mild, tender and creamy)
- 15 oz box of beef broth
- oil
Directions
Mix the ingredients for the cedar wild rice base in a crock pot and prepare per instructions for cooking rice in a crock pot until rice is done. Remove the sprig of cedar and set aside (or freeze for later use).
In a dutch oven, heat a little oil and cook the onion until just translucent. Add the meat and lightly brown, then add the precooked rice base and the beef broth. Simmer until meat is just cooked, and rice has broken down to thicken the stew.
